- 1/2 kg Rice (Soaked for half a hour)
- 1/2 kg Chicken
- 1 Onion (Chopped)
- 1/2 cup Ghee/Oil
- 1 tsp Ginger Garlic paste
- 4 Green Chilli
- 1 cup Yougurt
- 2 pieces Green Cardamom
- 2 pieces Black Cardamom
- 8 Cloves
- 1 tsp Nutmeg and Mace Powder
- 1 tbsp Salt
- 3 pieces Ginger
- 2 Cinnamon
- 1/2 tsp Black pepper
- 1 tbsp Cumin
- 1 tsp Fennel
- 1 and 1/2 tbsp Coriander seeds
- 1 Bay leaf
- 1 Star Anise
- 3 piece Onion
- 4 Garlic Cloves
- 3 piece Ginger
- 4 Glass Water
Steps to make to make Yakhni Pulao
- Firstly we'll make Yakhni, so add Chicken in a pot.
- Add Cumin, Fennel, Coriander Seeds, Black pepper, Green and Black Cardamom, Cinnamon, Bay leaf, Star Anise, Three pieces Onion, Four Cloves Garlic, 3 piece Ginger, Salt and Water. Mix it and Cook for Five Minutes on high flame
- After Five minutes, You'll see three glass water left instead of four glass. Turn the flame Medium and Cook again for Ten minutes.
- Turn off the flame and take the Chicken out of the pot. Now drain the Yakhni and put it aside.
- In another pot add Ghee/Oil and Onion. Fry the onions until Brown on Medium Flame.
- After the onions turned Brown, add Ginger Garlic paste and Mix. Now add your Chicken. Mix it.
- With a knife make vertical cuts on the green chilli and put it in the chicken. Add Nutmeg and Mace Powder. Add Yogurt and Mix.
- Cook for 2 Minutes while stirring the Chicken. Now add the Yakhni in the Chicken. Add 1 glass water. Mix and Cook for two minutes on High Flame.
- Now add your Rice. Mix it. Cook for 6 minutes on High Flame so the Water dries.
- Now steam the Rice for 15 minutes on Very Low Flame.
- Now turn off the flame. And let the Rice sit for 5 minutes in the Pot.
- Yakhni Pulao is ready. Now Serve.
